One bowl, easy coconut flat bread (Sri Lankan coconut roti)

My son loves playing with dough and the rolling pin his favorite tool in the kitchen. So this is great to make with him as it helps his motor skills and gives him an opportunity to be creative.

I’ve cut out scallop edged rounds for the flat bread, and my son made ‘snails and snakes’ with his share of the dough!

What you need:

  • 3 cups plain flour
  • 1 cup of coconut (you can use freshly grated coconut or desiccated coconut soaked in 1/2 cup of water or milk)
  • Sufficient water to make a ball out of the dough
  • Salt to taste
  • rolling pin & cutters (optional)

Method

Mix everything in one bowl and roll out the dough and cut circles or shapes as you like. Cook on a medium fire until it is cooked on both sides.

You can enjoy with butter, jam, fruit, chutneys, meat, peanut butter or chocolate spread!
